PRALINES

PRALINES

2 cups sugar
1 tsp. baking soda
1 cup buttermilk
½ tsp. salt
2 tbsp. Butter
2 ½ cups pecan halves
1 tsp. vanilla


Combine sugar, soda, buttermilk and salt in a large pan or kettle. Let boil for 5 minutes and add butter and nuts. Stir and let mixture reach soft ball stage (about 5 minutes). Remove from heat and add 1 tsp. vanilla and stir until smooth and glossy. Drop by teaspoonfuls onto waxed paper.

CINNAMON CANDY

Cinnamon Candy


2 ½ Cups Sugar
½ Cup Water
1 Cup Corn Syrup (light)


Cook to hard crack stage (300 degrees) stirring now & then.
Add 1 teaspoon cinnamon oil, and red coloring.
Stir and pour into buttered pan.
Let set a while till hard.
Make indention lines and turn upside down to shake out candy and break into pieces.

* Candy thermometer is a necessity

PECAN BRITTLE

Pecan Brittle

1 cup light corn syrup
1 teaspoon salt
2 cups sugar 2 teaspoons soda
1/2 cup water
1/4 stick butter
2 cups broken pecans

1. Cook syrup, sugar, and water until soft-ball stage.
2. Add nuts and cook until crack stage (300 degrees)
3. Remove from heat and add soda, salt and butter.
4. Pour on well-greased surface and stretch.

Easy Pecan Brittle

2 cups granulated sugar
1 cup light corn syrup
1 cup water
1/8 teaspoon salt
2 cups chopped pecans
1 tablespoon butter
1 teaspoon baking soda

1. Lightly grease a baking sheet and set aside.

2. Combine sugar, light corn syrup, water and salt in a large, heavy skillet. Bring to a rolling boil over medium-high heat. Add chopped pecans; continue cooking until the syrup begins to turn brown. Remove from heat and stir in butter and baking soda.
3. Pour onto prepared baking sheet. Cool completely before breaking into pieces.

Makes 16 servings.
