LEMON LIME BARS



LEMON LIME BARS

CRUST:
1 cup all-purpose flour
1/3 cup softened unsalted stick butter
1/2 cup confectioners' sugar

TOPPING:
1 cup sugar
2 eggs
2 tbs all-purpose flour
2 tbs lime juice or lemon juice
1/2 tsp lemon extract
1/2 tsp baking powder
1/4 tsp salt
Confectioners' sugar

Combine crust ingredients and pat into an 8-in. square baking pan. (I used the as seen on tv brownie pan and it worked fine as well). Bake at 375' for 15 minutes. Meanwhile, for topping, combine sugar, eggs, flour, lime juice, extract, baking powder and salt in a mixing bowl. Mix until frothy, pour over crust. Bake at 375' for 18-22 minutes or until light golden brown. Cool. Dust with confectioners' sugar. Yield: 9 servings



*Original recipe called for lemon juice but I was out so I used lime and it turned out so good. My mom told me that they were the best lemon bars she's ever had even over her own recipe. I told her they were lime. haha I still used lemon extract though. I've had to make 2 batches in 2 days because everyone loved them. The boys even ate these over the peanut butter chocolate chip cookies they made.



For St. Patricks Day/brother's birthday I added green food coloring.
