SWEET POTATO COCONUT CHICKEN w/ FRIED RICE






1 large can sweet potatoes
1 can coconut milk
1 can chicken broth
2 cans crushed tomatoes
1 large onion chopped
2-4 cooked/cut chicken breasts
1 tbs coconut oil
1/4 tsp oregano
cayenne pepper & salt to taste

Saute onion in coconut oil over med high heat. Add chicken to onions and toss. Next add sweet potatoes, coconut milk, crushed tomatoes, and spices. Simmer for 20 minutes. Serve over fried rice.

*Instead of adding a can of chicken broth I just added about a cup of broth I used in poaching the chicken. If you want to add more chicken broth it makes a great soup instead of a thick stew/curry. This dish can handle a lot of heat and I love it with extra cayenne sprinkled on top. I make a mild dish and add extra to mine so I don't kill everyone haha Always season to your taste!



Fried Rice
2 cups cooked white rice
1/2 cup frozen peas and carrots
2 tsp turmeric
1 tsp chicken bullion
2 tsp Worcestershire sauce
1 tbs cooking oil

Saute peas and carrots in cooking oil. Add in cooked rice and spices. Cook on med heat for a couple minute.
